La Brujula conservas is regarded as one of the finest preserved sea foods in the world. They produce the highest quality conservas for 50 years. Collected at peak season, handled and processed by local women in local villages of Galicia, Spain.

COCKLES IN BRINE

 

These cockles from the Galician estuaries are gently cooked in seawater. Preserved in a light brine they are then hand packed to ensure perfect condition.

YELLOW FIN TUNA VENTRESCA IN OLIVE OIL

Fillets of belly of the Yellow fin Tuna. Prized for its supple texture much like the white tuna belly, but much leaner, with about half the amount of fat and a meatier flavor.  Packed in Spanish Olive Oil.

Beautiful, tender razor clams that are hand-harvested on the Galician coast of Spain. Packed with a natural brine, recanting the oceanic freshness from which they came. 

SMALL SARDINES IN OLIVE OIL 

A small variety of the finest sardines from the Galician coast, pack in Spanish olive oil. 

SEA URCHIN ROES IN BRINE

 

Commonly known as Uni, sea urchin roe of some of the most prized delicacies from the ocean. Rich and full of umami, these roe are packed in a brine to reinforce the ocean freshness they are drawn from.
