Our suggestion for decanting time is based on bottles we tried at Txanton in 2020. We guarantee that Txanton stocks are imported and maintained in proper storage within the correct temperature and humidity suitable for wine.

Good To Know: Relatively young in terms of fellow Burgundian Wineries, Sylvain Pataille has established itself through its focus on purity of fruit and terroir, minimal intervention during production and as one of the leading, certified organic vineyards in the Marsannay-la-Côte region in the north of the Côte d'Or.

Sylvain Pataille's Bourgogne Rouge 2018 is a brilliantly refreshing Pinot Noir that is best enjoyed now or cellared for a few more years. Luscious fresh strawberry notes on the nose are peppered with nuances of sweet spice and subtle mineral undertones. The palate is round but elegantly light with nuances of crushed cranberries and forest mushrooms. The finish is subtly long with featherlight tannins that caress the palate with afternotes of pomegranate and cinnamon.

Established in 1999, winemaker Sylvain Pataille started with just one hectare of vines while still working full time in a laboratory located in Beaune. He decided to go all out on his own venture in 2001 and his success has led to now owning a total of 15 hectares of vineyards within or just outside the boundary of Marsannay, all of which are certified organic. Pataille's use of natural yeasts for fermentation, and minimal doses of sulphur added only during bottling has developed quite the following amongst wine critics and fellow winemakers. Also good to note about Pataille's wines is that his white wines are filtered but not fined and his red wines are bottled without fining or filtration; creating a very unique profile and purity to his style.
